Pancakes with grilled banana and strawberries – Breakfast

Make fluffy, delicious pancakes on your BBQ. We used the Ziegler & Brown Twin Grill with the optional side hotplate but you can make this on any BBQ, all you need is a flat hotplate!

We’ve used bananas and strawberries but you can use any fruit in season. Pineapple and nectarines are excellent on the BBQ.

  • 300g plain flour
  • ¼ tsp bicarbonate of soda
  • 50g sugar
  • 1 egg
  • 375ml milk
  • 25g butter, melted
  • 4 strawberries, halved
  • 1 banana, peeled and halved
  • Icing sugar
  • Cooking spray – optional
  1. Remove one of the grills and replace with the optional hotplate, smooth side up.
  2. Turn on both burners halfway and pre-heat the BBQ for 5 minutes.
  3. Sift the dry ingredients together in a bowl, form a well in the centre.
  4. Whisk the milk and egg together and pour into the well of the flour mixture, whisking as you do so until just combined
  5. Spray the flat hotplate with cooking spray and pour the pancake batter in small circles to fill the half hotplate.
  6. When bubbles appear on the surface of the pancake and the edges firm slightly, it’s time to flip them over. Cook for a further minute or so on the other side. Repeat until batter is finished.
  7. On the grill side, grill the fruit until lines appear on the flesh and serve with the pancakes, dust with icing sugar and serve
