Plank Salmon Thai Style – Fish

There is nothing like cedar scented salmon fresh off the barbeque. It’s the taste of summer. Grilling on cedar planks is not only impressive and easy but it is also a healthy alternative. The cedar is infused naturally through the heat of the barbie giving it that rich, smoky flavour.

About Cedar-Plank Grilling:

  • Use untreated planks to ensure your food is not contaminated with chemicals. Planks can be bought at Barbeques Galore.
  • Planks should measure about 40 x 20 x 2.5cm thick
  • You can also try using oak, maple, cherry or apple wood planks for different flavours.
  • Prep Time:10 minutes (plus marinating and soaking time)
  • Cooking Time:15 minutes
  • Serves:4
  • 1 BBQs Galore cedar plank
  • 4 x 250g salmon fillets
  • 50g tamarind paste
  • 1 tablespoon grated palm sugar
  • 1 tablespoon fish sauce
  • 1 stalk lemon grass
  • 1 whole long red chilli
  • 1 tablespoon fresh grated ginger
  1. Soak plank in cold water for one hour before starting.
  2. Combine all the ingredients for the marinade in a bowl.
  3. Marinate the salmon fillets for two hours.
  4. Place soaked plank onto barbeque and wait for it to start to smoke.
  5. Brush any excess marinade from the salmon, but leave a bit to carmelise.
  6. Place skin side down on plank and cook for 10-15 minutes or as desired with the hood down.
