Stuffed Calamari with spiced couscous – Seafood

Spice up your seafood with this calamari and couscous creation. We cooked it on the Ziegler & Brown Twin Grill but you can make it on any BBQ.

  • 4 Calamari – cleaned (gutted, skin & head removed)
  • 1 cup couscous
  • 1 cup water
  • 2 tsp chili powder
  • 2 tsp smoky paprika
  • 2 tsp cumin powder
  • 1 bunch of coriander, finely chopped
  • 200g rocket
  • Salt, pepper, olive oil
  1. Boil the water and add to the couscous. Add spices and a little oil. Stir and cover, leave for 2-4 minutes. Once cooked add coriander
  2. Wash the calamari and stuff with the spiced couscous until full
  3. Preheat the bbq to 200 degrees
  4. With a little oil and seasoning coat the stuffed calamari, place on the hot grill and turn over after 3 minutes, keep turning so as to not burn the calamari
  5. Once the calamari is covered with grill marks on all sides take off the heat and slice up, place on top of the dressed rocket leaf and serve
