Prepare the Pancake Batter: In a large bowl, whisk together the flour, baking powder, salt, and sugar. In a separate bowl, whisk together the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and whisk until just combined (a few lumps are okay).

Preheat Your Griddle: Heat your BBQ griddle over medium heat. Lightly grease the surface with a little extra melted butter or cooking oil.

Cook the Bacon: Lay the bacon rashers on the preheated griddle. Cook until crispy, flipping occasionally with a pair of sturdy tongs to ensure even cooking. Remove the bacon and set aside on paper towels to drain.

Cook the Pancakes: Pour ¼ cup of pancake batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbly. Use a wide, flat spatula to carefully flip the pancakes.

Serve Immediately: Stack the golden griddle pancakes with crispy bacon, drizzle generously with maple syrup, and garnish with fresh berries if desired.
