Cajun Roast Chicken & Roast Vegetables

Spice up your Sunday with this delicious roast chicken. We used the Ziegler & Brown Triple Grill with the optional cast-iron baking dish but you can use any pan with an elevated roasting rack.

Preheat the BBQ to 200 degrees.

If using the Ziegler & Brown Triple Grill, remove the centre grill. Preheat the bbq on high to 200 degrees. Turn both side burners to low and turn centre burner off.

Mix the Cajun spice with a little oil until it’s looser than a paste, then roll the chicken in it to coat.

Stuff the chicken with the breadcrumb mix

Place the chicken in the optional cast iron baking dish. Ensure the wire rack is in place at the bottom to elevate the chicken. Surround the chicken with potatoes, sweet potatoes and garlic cloves – Drizzle vegetables with olive oil and season with salt and pepper.

Place the cast iron baking dish in the centre of the Triple grill. Be careful – The grill is very hot.

07.

Cook with the hood down for an hour or until chicken is cooked (when the juices run clear if you cut into the thickest part)
