Method

01.

Trim the skin off the pork chops leaving as mush fat on the outside as possible, then score the fat with a sharp knife about half a centimetre deep.

Combine all the marinade ingredients in a food processor and blend until smooth.

Put some gloves on and then rub the marinade all over the pork chops and place in a plastic or ceramic dish to marinate for at least three hours or overnight if possible.

To prepare the Jerked barbeque sauce, combine all the ingredients into a heavy bottom sauce pan and bring to the boil. Reduce the liquid by half and then puree with a hand held stick blender. Then season with salt.

Prepare the gas barbeque for direct grilling on a medium to high heat, graduating to a low heat on one side.

06.

Cook the pork chops over medium high heat of your barbeque until nicely patterned and coloured by the grill bars. Then move to the lower heat section of your barbeque. Do this progressively as you will lose all your heat if you overcrowd your grill.

07.

Once cooked, brush your chops with the jerk barbeque sauce and serve.
